Contrary to popular opinion, Piglins are indeed not considered undying mob in Minecraft.

According to Minecraft Wiki, piglins are NOT referred to as undead mobs.
Additionally, Smite affects all zombie-like mobs only, while piglins fall outside this category in Minecraft lore.
